5. Fold and Cook the Flatbread:
Fold the edges of the dough over the filling, creating a sealed edge to keep the filling inside. You can roll the edges slightly or simply fold them in for a rustic look.
Heat a large skillet or frying pan over medium heat and lightly grease it with olive oil. Place the assembled flatbread into the hot skillet and cook for 3-4 minutes on each side, pressing gently to ensure the layers cook evenly and the flatbread gets golden brown and crispy.
Repeat with the second portion of dough.
6. Serve:
Once cooked, remove the flatbread from the pan and let it cool for a minute before slicing. Serve warm, garnished with extra fresh herbs if desired.
