1. Combine flour, salt, and pepper in a large resealable plastic bag. Add chicken and shake until well coated.
2. Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown on each side, about 3-4 minutes per side.
3. Transfer the browned chicken to the slow cooker.
4. In the same skillet, add minced garlic and sliced bell peppers, sautéing until just tender. Pour over the chicken in the slow cooker.
5. Mix together chicken broth, lemon juice, and Italian seasoning. Pour the mixture over the chicken and peppers.
6. Cover and cook on low for 4-5 hours until the chicken is tender.
7. Sprinkle with chopped parsley and grated Parmesan cheese before serving.
Variations & Tips
For a spicy kick, add a teaspoon of red pepper flakes along with the Italian seasoning. If you’re in the mood for more of a seafood twist, consider adding some shrimp during the last 30 minutes of cooking.
