Ingredients:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar (for the crust)
  • 4 tablespoons unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar (for the filling)
  • 3 large eggs
  • 1 cup white chocolate chips, melted and cooled
  • Zest and juice of 2 lemons
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat your oven to 350Β°F (175Β°C). Combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  2. Beat cream cheese and 1 cup sugar until creamy. Add eggs one at a time. Mix in white chocolate, lemon zest, lemon juice, and vanilla. Pour over crust.
  3. Bake for 50-60 minutes until the center is set but jiggles slightly. Cool for 10 minutes, then loosen edges with a knife. Cool completely before chilling for at least 4 hours, preferably overnight.
