° 8 medium sized potatoes
° 1 cup sour cream
° 1/2 cup mayonnaise
° 1 package of cooked and crumbled bacon
° 1 small onion chopped
° Chives, as desired
° 1 1/2 cups shredded cheddar cheese
° Salt and pepper to taste

Wash the potatoes and cut them into small pieces. Cover with water and boil until fork is tender, about 20-25 minutes. Drain the potatoes and let them cool. Once cool, mix mayonnaise and sour cream. Add onions, chives and cheese. Salt and pepper to taste. Add grated cheese and bacon and serve.
