1 cup unsalted butter, softened
1/2 cup fresh or frozen cranberries
1/4 cup honey
1/4 teaspoon salt
1/2 teaspoon orange zest (optional)
Directions
1. In a small saucepan, combine the cranberries and honey. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly, about 5-7 minutes.
2. Remove the cranberry mixture from the heat and let it cool to room temperature.
3. In a mixing bowl, beat the softened butter until creamy and smooth.
4. Add the cooled cranberry mixture, salt, and orange zest (if using) to the butter. Mix until well combined, ensuring the cranberries are evenly distributed.
5. Transfer the cranberry honey butter to a serving dish or airtight container. Refrigerate for at least 1 hour to allow the flavors to meld.
6. Before serving, let the butter sit at room temperature for a few minutes to soften slightly.
