1. In a bowl, combine the warm water, active dry yeast, and granulated sugar. Let it sit for 5 minutes or until the mixture becomes frothy.
2. In a large mixing bowl, combine the all-purpose flour and salt.
3. Gradually add the yeast mixture to the dry ingredients, mixing until a soft dough forms.
4. Knead the dough on a floured surface for about 5 minutes or until smooth and elastic.
5. Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
For Assembling and Baking:
1. Preheat the oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper.
2. Punch down the risen dough and divide it into equal-sized portions.
3. Roll each portion into a long rope and flatten it slightly with your fingers.
4. Place a mozzarella cheese stick and chopped fresh herbs in the center of each flattened rope.
5. Fold the dough over the filling, pinching the edges to seal it completely.
6. Shape each filled dough into a pretzel shape.
7. In a large pot, bring water to a boil and add the baking soda.
8. Gently drop the pretzels into the boiling water, one or two at a
time, and let them cook for about 30 seconds on each side.
9. Remove the pretzels from the water using a slotted spoon and place them on the prepared baking sheet.
10. Brush each pretzel with beaten egg and sprinkle coarse sea salt and shredded Italian cheese blend on top.
11. Bake the pretzels in the preheated oven for 12-15 minutes or until they turn golden brown.
