Instructions
1. In a large bowl, beat the egg whites and avocado oil with the salt, granulated sugar, and brown sugar.
2. Add the applesauce, raisins, vanilla extract, baking soda, and cinnamon. Stir well.
3. Stir in the oats.
4. Add the flour and mix until just incorporated.
5. Chill the dough, covered, in the fridge for at least 1 hour.
6. Preheat the oven to 375°F (or 350°F for convection).
7. Roll the dough into 1 1/2 inch balls. Place 12 per baking sheet.
8. Bake for about 13 minutes. Let rest on the sheet for 1 minute before transferring to a rack to cool completely.
9. Store in an airtight container.
