Mix Sauce: Whisk together cream of chicken soup, chicken broth, and sour cream.
Layer Casserole: Place chicken in the baking dish. Top with vegetables, then pour the sauce mixture evenly. Sprinkle with cheddar cheese.
Add Crispy Topping: Combine crushed crackers with melted butter and sprinkle over the cheese. Cover with foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until golden and bubbly.
Serve: Allow the casserole to cool slightly before serving. Garnish with parsley, if desired.
