Ingredients:
Mixed greens (such as arugula, spinach, or lettuce)
Cherry tomatoes, halved
Cucumber, sliced
Red bell pepper, thinly sliced
Carrot, julienned or grated
1/4 red onion, thinly sliced
1/4 cup feta cheese (optional)
1/4 cup walnuts or almonds (optional)
For the dressing:
2 tbsp olive oil
1 tbsp balsamic vinegar or lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
Instructions:
Prepare the salad:
In a large bowl, combine the mixed greens, tomatoes, cucumber, bell pepper, carrot, and red onion.
Add in the feta cheese and nuts if using.
Make the dressing:
In a small bowl, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, salt, and pepper until emulsified.
Toss and serve:
Drizzle the dressing over the salad just before serving and toss gently to combine.
