Directions:
1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
2. Mix the flour, baking powder, baking soda, and salt in a bowl. Set aside.
3. Beat together the sugar, vegetable oil, and eggs in another bowl until light and fluffy. Stir in the vanilla extract and mashed sweet potatoes.
4. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until well combined.
5. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean.
6. While the cake is baking, mix the sweetened condensed milk, evaporated milk, and dark rum in a bowl.
7. Let the cake cool for about 10 minutes after baking, then poke holes all over the top with a fork.
8. Slowly pour the milk mixture over the warm cake, allowing it to soak in. Let it cool completely.
9. Before serving, top with whipped cream and a sprinkle of ground cinnamon. Enjoy the melt-in-your-mouth goodness!
