Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
Stir in the cumin, chili powder, salt, and black pepper, cooking for another minute.
Pour in the enchilada sauce and black beans, stirring to combine. Let the mixture simmer for about 5 minutes.
Spread a thin layer of the beef mixture on the bottom of a 9×13-inch baking dish.
Layer 4 tortillas over the beef mixture, followed by half of the remaining beef mixture and 1 cup of cheese.
Repeat the layers with the remaining tortillas, beef mixture, and cheese.
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Garnish with chopped cilantro before serving.
Variations & Tips
For a vegetarian version, replace the ground beef with sautéed mushrooms or additional beans. If you have picky eaters, you can use mild enchilada sauce and reduce the chili powder. Feel free to add more vegetables like bell peppers or corn for extra nutrition. For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the beef mixture.
