- Add the activated yeast mixture to the eggs and sugar, mixing well.
- Gradually add the wet ingredients to the flour mixture, stirring continuously.
- Once combined, add the softened butter and knead until the dough becomes smooth and elastic. You can use a stand mixer with a dough hook attachment for this.
- First Rise:
- Place the dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place until it has doubled in size. This may take about 1-2 hours.
- Shape the Rolls:
- Punch down the risen dough and divide it into equal portions to form rolls.
- Shape each portion into a ball and place them on a baking sheet lined with parchment paper.
- Second Rise:
- Cover the rolls with a kitchen towel or plastic wrap and let them rise for another 30-60 minutes, or until they are puffy.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Egg Wash:
- In a small bowl, whisk together the egg and milk for the egg wash.
- Brush the tops of the rolls with the egg wash.
- Bake:
- Bake the rolls in the preheated oven for about 15-20 minutes, or until they are golden brown and sound hollow when tapped.
- Cool:
- Allow the milk brioche rolls to cool on a wire rack before serving.
