Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
Prepare the Potatoes:
Boil the diced potatoes in a large pot of salted water until tender (about 10-15 minutes). Drain and let cool slightly.
Make the Casserole Mixture:
In a large bowl, combine the sour cream, cream of chicken soup, 1 1/2 cups of the cheddar cheese, green onions (if using), bacon (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
Combine:
Fold the cooked potatoes into the creamy mixture until they are well coated.
Transfer to Baking Dish:
Pour the potato mixture into the greased baking dish, spreading it evenly.
Top with Cheese and Chips:
Sprinkle the remaining 1/2 cup of cheddar cheese on top, followed by the crushed potato chips or cornflakes.
Bake:
Bake in the preheated oven for about 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
Serve:
Let it cool for a few minutes before serving. Enjoy your creamy, cheesy Mississippi Mud Potatoes!
