Directions:
1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch pan.
2. In a large bowl, mix together the white sugar, brown sugar, cocoa powder, salt, baking soda, baking powder, flour, and instant coffee granules.
3. Add in the eggs, milk, oil, and vanilla extract. Mix until well combined.
4. Stir in the boiling water until the batter is smooth. Pour the batter into the prepared pan.
5. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before frosting.
Frosting:
1. In a medium saucepan, melt the butter. Stir in the cocoa powder until smooth.
2. Remove from heat and gradually blend in the powdered sugar, milk, and vanilla extract until the frosting is smooth and spreadable.
3. Spread the frosting over the cooled cake. Enjoy!
Tips:
– For an extra rich flavor, add a pinch of cinnamon or cayenne pepper to the batter.
– Make sure to properly grease and flour the pan to prevent the cake from sticking.
– The instant coffee granules enhance the chocolate flavor of the cake without adding a coffee taste. Don’t skip this ingredient!
– You can also add chocolate chips or nuts to the batter for added texture and flavor.
