Combine Ingredients: In a large pot or Dutch oven over medium-high heat, add the sliced bananas, sugar, crushed pineapple (with juices), ground coconut, and lemon juice. Stir well.

Bring to a Boil: Let the mixture come to a boil, then reduce heat to medium-low.

Simmer & Thicken: Cook, stirring frequently, until the mixture thickens and reduces. The bananas will soften and break down.

Check Consistency: The Monkey Butter is ready when it coats the back of a spoon.

Jar & Cool: Remove from heat and transfer to glass jars. Let cool completely before refrigerating.
Note: If ground coconut isn’t available, unsweetened shredded coconut works well. Flaked coconut can also be used but will give a chunkier texture.
