Stir in the shredded cheddar cheese until melted and combined.
4. Stuff the Peppers:
Spoon the BBQ beef mixture evenly into each bell pepper.
5. Bake the Peppers:
Cover with foil and bake for 25–30 minutes, or until the peppers are tender.
6. Add the Final Touches:
Remove the foil, sprinkle the tops with shredded mozzarella cheese, and bake uncovered for another 5 minutes, or until the cheese is melted and bubbly.
7. Serve & Enjoy:
Garnish with fresh parsley or green onions, and serve hot with a side of coleslaw, roasted potatoes, or a crisp salad.
