Preheat your oven to 375°F (190°C).
In a large mixing bowl, cream together the butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract.
In another bowl, whisk together the flour, baking soda, cream of tartar, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Variations & Tips
For a festive touch, sprinkle the tops of the cookies with colored sugar before baking. You can also add a hint of almond extract for a different flavor profile. If you prefer a softer cookie, reduce the baking time slightly. These cookies can be stored in an airtight container at room temperature for up to a week, making them perfect for gifting or enjoying over several days.
