Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until the mixture is light and fluffy.
Beat in the 2 large eggs, one at a time, ensuring each is fully incorporated before adding the next.
Mix in the 1/4 cup of buttermilk and 2 teaspoons of vanilla extract until well combined.
In a separate bowl, whisk together the 3 cups of all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
While the cookies are baking, prepare the butter glaze by whisking together 1/2 cup of melted unsalted butter, 1 cup of confectioners’ sugar, 1 teaspoon of vanilla extract, and 2 tablespoons of water until smooth.
Once the cookies are done, remove them from the oven and brush the warm cookies with the prepared glaze.
Allow the cookies to cool on a wire rack before serving.
