Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
Stir in the diced red, yellow, and green bell peppers, along with the diced potatoes. Cook for about 5 minutes, allowing the vegetables to soften slightly.
Season the mixture with ground cumin, chili powder, salt, and pepper, stirring to combine.
Transfer the beef and vegetable mixture to a baking dish, spreading it evenly.
Sprinkle the shredded cheddar cheese over the top of the mixture.
Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro if desired.
