Add the freshly squeezed lemon juice and sliced lemon to the slow cooker.
Stir in the vanilla extract.
Cover and cook on low for 2-3 hours, allowing the flavors to meld together.
Once done, let the lemonade cool to room temperature.
Strain the lemonade to remove the lemon slices and any pulp, if desired.
Transfer the lemonade to glass jars or a pitcher and refrigerate until chilled.
Serve over ice, garnished with fresh mint leaves if desired.

For a more herbal twist, add a few sprigs of fresh rosemary or thyme to the slow cooker along with the lemon slices. If you prefer a sparkling version, top off each glass with a splash of club soda just before serving. For a spicier kick, consider adding a few slices of fresh ginger to the slow cooker. Adjust the sweetness by adding more or less honey to suit your taste. You can also experiment with different types of honey, such as wildflower or clover, to subtly change the flavor profile.
