Ingredients:
Ingredient Quantity
Eggs 4
Butter (or margarine) 2 tablespoons
Wheat Flour 3 tablespoons
Green Corn (canned) 1 can
Sugar 1 cup (Corrected amount)
Cornmeal 1 cup
Grated Parmesan 50 g
Milk 1 liter
Baking Powder 1 tablespoon
Instructions:
Preheat your oven to 200°C (400°F). Grease a baking tray with butter and corn flour (or another type of baking spray).
Place all the ingredients (except butter for greasing the pan) in a blender and blend until smooth. You can also use an immersion blender if you prefer.
Pour the batter into the greased baking tray.
Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool slightly before slicing and serving.
Tips:
You can substitute fresh corn kernels for canned corn. If using fresh corn, be sure to puree it in the blender with the other ingredients.
For a sweeter cake, you can add an additional ¼ cup of sugar.
If you don’t have grated parmesan cheese, you can omit it or substitute another type of cheese.
You can also add other ingredients to the batter, such as chopped nuts, dried fruit, or chocolate chips.
