Preheat your oven to 350°F (175°C).
Make the Dough
In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Mix in the vanilla extract and salt.
Gradually add the flour, stirring until just combined.
Fold in the mini chocolate chips.
Form the Cups
Divide the dough into 12 equal portions.
Press each portion into the bottom and up the sides of a greased muffin tin to form a cup shape.
Bake
Bake for 10–12 minutes, or until the edges are lightly golden.
Add the Filling
Remove from the oven and immediately press a few semi-sweet chocolate chips into the center of each cookie cup.
Cool
Allow the cookie cups to cool in the muffin tin for about 10 minutes, then transfer them to a wire rack to cool completely.
Variations & Tips
For a nutty twist, add ¼ cup chopped nuts like pecans or walnuts to the dough.
For peanut butter lovers, add 1 teaspoon of peanut butter to the center of each cup with the chocolate chips.
For a festive touch, sprinkle colored sugar or sprinkles on top before baking.
If you have picky eaters, substitute the chocolate filling with a small dollop of jam or a piece of caramel candy.
