1. Place the halved or quartered baby potatoes in your slow cooker.
2. In a small bowl, mix the olive oil, Italian seasoning, minced garlic, Parmesan cheese, salt, and pepper.
3. Pour the olive oil mixture over the potatoes, and toss to coat them evenly.
4Cover the slow cooker and cook on low for 4-5 hours, or until the potatoes are tender and cooked through.
5. Give the potatoes a good stir before serving, and sprinkle with freshly chopped parsley for a pop of color and added flavor.

If you have picky eaters at home, you can adjust the seasonings to your family’s tastes. For a milder flavor, reduce the garlic or use garlic powder instead. You can also add other vegetables like bell peppers, onions, or carrots to the slow cooker for more variety.
