Cut each peach into 8 slices.
Unroll the crescent roll dough and separate into triangles.
Place a peach slice at the wide end of each triangle and roll it up.
Arrange the dumplings in a white casserole dish.
In a medium saucepan, combine the sugar, orange juice, melted butter, and vanilla extract. Stir over medium heat until the sugar is dissolved.
Pour the sugar mixture over the dumplings.
Sprinkle the ground cinnamon over the top.
Bake in the preheated oven for 30-35 minutes, or until the dumplings are golden brown and the sauce is bubbly.
Let cool slightly before serving.
Variations & Tips
For a twist, try using apples or pears instead of peaches. You can also add a handful of chopped nuts, like pecans or walnuts, for some extra crunch. If you have picky eaters, consider serving the dumplings with a side of caramel sauce for dipping. For a healthier version, reduce the sugar and use whole wheat crescent roll dough.
