Add dates, cocoa powder, chia seeds, vanilla, coconut oil, and salt, then blend until a sticky dough forms.
If too dry, add 1-2 tbsp warm water until it sticks together.
Press the mixture into a lined baking dish to form an even layer.
Optional: Melt dark chocolate and drizzle over the top.
Refrigerate for at least 1 hour, then cut into bars.
Store in an airtight container in the fridge for up to 2 weeks!
