Instructions:
- Prep Beans:
- Rinse beans, remove debris, and soak overnight or use quick soak method (boil, then soak for 1 hour). Drain and rinse.
- Cook Sausage:
- In a large Dutch oven, heat oil over medium heat. Brown sausage slices, then remove and set aside.
- Sauté Vegetables:
- In the same pot, sauté onion, carrots, celery, and garlic until tender and onion is translucent.
- Add Ingredients:
- Stir in tomato paste and cook for 1 minute. Add beans, sausage, broth, bay leaf, thyme, and rosemary. Stir well.
- Simmer:
- Bring to a boil, reduce heat to low, cover, and simmer for 1.5 to 2 hours, until beans are tender. Stir occasionally, adding more broth or water if needed.
- Finish and Serve:
- Remove bay leaf and season with salt and pepper. Serve hot, garnished with parsley.
