Prepare the Berry Chia Filling:

  1. In a small saucepan, combine the frozen berries and your choice of sweetener.
  2. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly.
  3. Stir in the chia seeds and let the mixture sit for about 10 minutes to thicken further.

Prepare the Bar Mixture:

  1. Preheat your oven to 180Β°C (350Β°F).
  2. In a large bowl, combine the oatmeal and almond flour.
  3. Melt the coconut oil and add it to the dry ingredients.
  4. Mash the banana and add it to the mixture along with a pinch of salt and stevia.
  5. Mix well until all ingredients are combined and a dough forms.

Assemble and Bake:

  1. Line a baking dish with parchment paper.
  2. Press half of the bar mixture evenly into the bottom of the baking dish.
  3. Spread the berry chia filling over the base layer.
  4. Cover the filling with the remaining bar mixture, pressing it down gently.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
