2. Cook the Rice
In a medium saucepan, combine the rinsed rice with the milk and cream.
Bring to a boil over medium-high heat, then reduce to a low simmer.
Cook for 18–20 minutes, stirring occasionally, until the rice is tender and most of the liquid is absorbed.
3. Whisk the Custard
In a separate bowl, whisk together:
Sugar
Eggs
Vanilla extract
Cinnamon
Salt
This forms the rich custard base of your pudding.
4. Combine and Thicken
Slowly stir the custard mixture into the cooked rice.
If using raisins, add them now.
Continue to cook over low heat, stirring frequently, for 5–7 minutes until thickened.
Avoid boiling to preserve the creamy texture.
5. Serve
Let the pudding cool slightly. Serve warm or chilled.
Top with a sprinkle of ground nutmeg for a cozy touch.
Storing Leftovers
Refrigerate any leftovers in an airtight container. Enjoy cold or gently reheat with a splash of milk for extra creaminess.
