Directions:
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the spinach and cook until wilted, about 2-3 minutes.
Pour in the heavy cream and stir until well combined. Gradually add the Parmesan cheese, stirring until melted and creamy.
Season with salt, pepper, and red pepper flakes if desired.
Toss the cooked penne into the skillet, mixing well to coat the pasta in the sauce.
Serve warm, garnished with extra Parmesan if desired.
