Ingredients:

  • Β½ cup oats
  • 2 apples, peeled, cored, and diced
  • 1Β½ cups yogurt
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1Β½ teaspoons baking soda

Instructions:

  1. Prepare Ingredients:
    • Peel, core, and dice the apples into small pieces.
    • Pulverize the oats in a blender or food processor until finely ground.
  2. Mix Dry Ingredients:
    • In a bowl, combine the ground oats, cinnamon, and baking soda.
  3. Mix Wet Ingredients:
    • In a separate bowl, whisk together the eggs and yogurt until well combined.
  4. Combine Ingredients:
    • Add the wet ingredients to the dry ingredients, mixing until fully incorporated.
    • Gently fold in the diced apples.
  5. Cook Pancakes:
    • Heat a nonstick pan or griddle over medium heat and coat with cooking spray or a little oil.
    • Pour small amounts of batter onto the pan to form pancakes.
    • Cook each pancake for 2-3 minutes on one side, until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  6. Serve:
    • Serve the pancakes hot, topped with honey, maple syrup, additional yogurt, or fresh fruit.
