In a large bowl, toss the potato sticks with olive oil, salt, black pepper, garlic powder, paprika, and dried oregano until evenly coated.
Spread the seasoned potato sticks on a separate baking tray lined with parchment paper.
Bake:
Place both trays in the preheated oven. Bake the chicken fillets for 20-25 minutes until they are golden brown and cooked through.
Bake the potato sticks for 25-30 minutes, turning them halfway through, until they become crispy and golden.
Serve:
Serve the Parmesan chicken fillets hot, accompanied by the crispy potato sticks.
