Instructions:
- Preheat the oven to 375°F (190°C). Grease a baking dish.
- In a skillet, cook the ground chicken over medium heat until browned. Add chopped onions and minced garlic, cooking until onions are translucent.
- Stir in the tomato sauce, dried oregano, dried basil, salt, and pepper. Simmer for 10 minutes.
- Layer the sliced potatoes at the bottom of the prepared baking dish.
- Spoon a portion of the chicken and tomato sauce mixture over the potatoes. Sprinkle with mozzarella and Parmesan cheese.
- Repeat the layers, finishing with a layer of cheese on top.
- Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes or until the top is golden and bubbly.
- Allow the potato lasagna to rest for 10 minutes before slicing.
