Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Wash and dry the zucchini. Using a vegetable peeler or mandoline slicer, create long, thin zucchini strips (fries). Aim for approximately 1/4 inch (6mm) thickness.
3. In a shallow dish, combine the flour, Parmesan cheese, garlic powder, oregano, salt, and pepper.
4. In a separate shallow dish, beat the egg.
5. In a third shallow dish, place the panko bread crumbs.
6. Dredge each zucchini strip in the flour mixture, ensuring it’s fully coated.
7. Dip the floured zucchini strip into the beaten egg, allowing any excess to drip off.
8. Finally, coat the zucchini strip thoroughly in the panko bread crumbs, pressing gently to adhere.
9. Arrange the breaded zucchini fries in a single layer on the prepared baking sheet.
10. Lightly spray the zucchini fries with vegetable oil.
11. Bake for 15-20 minutes, flipping halfway through, until golden brown and tender. Alternatively, heat vegetable oil in a large skillet over medium-high heat. Fry the zucchini fries in batches for 2-3 minutes per side, until golden brown and crispy. Remove from skillet and place on paper towels to drain excess oil.
12. Serve immediately. Enjoy!
