Ingredients:
1 1/2 cups rolled oats
1/2 cup creamy peanut butter
1/4 cup honey or maple syrup
1/2 cup mashed ripe banana (or unsweetened applesauce)
1/3 cup unsweetened cocoa powder
1/4 cup mini chocolate chips
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
Optional Topping:
Extra chocolate chips
Melted chocolate for drizzle

Preheat oven to 350°F (175°C). Grease or line a mini muffin pan.
In a large bowl, mix oats, cocoa powder, baking powder, and salt.
In another bowl, whisk together peanut butter, mashed banana, honey, and vanilla until smooth.
Pour wet ingredients into dry and mix until well combined. Fold in mini chocolate chips.
Scoop the mixture into mini muffin cups and press gently. Top with more chocolate chips if desired.
Bake for 12–15 minutes or until set. Let cool in the pan for 5 minutes, then transfer to a wire rack.
Drizzle with melted chocolate once cooled (optional).
