Simmer for 5–7 minutes until slightly thickened. If you want it thicker, mix cornstarch + water and stir it in.
Melt the cheese: Lay provolone slices over the beef mixture in the skillet. Cover for 1–2 minutes to melt.
Assemble: Spoon the cheesy beef mixture onto toasted buns or rolls.
