Preparation:
1. Place the diced pineapple in a blender. Add water and sugar. Blend until smooth.
2. Pour the pureed pineapple through a fine sieve into a large bowl or pitcher to separate the juice from the fruit pulp. Gently press the pulp with a spoon or spatula to extract as much juice as possible.
3. Add the freshly squeezed lemon juice to the pineapple juice mixture and stir well.
4. Pour the pineapple and lemon juice into glasses, about halfway full. Top with sparkling water for a fizz.
5. Add ice cubes to the glasses and garnish with fresh mint, if desired.
6. Stir well before serving and enjoy!
