Pineapple Quick Bread
Ingredients:
• 2 cups all-purpose flour
• 1 cup granulated sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 2 large eggs
• 1/2 cup vegetable oil (or melted butter)
• 1 tsp vanilla extract
• 1 can (8 oz) crushed pineapple, undrained
• 1/2 cup chopped nuts (optional – walnuts or pecans work great)
• 1/2 tsp cinnamon (optional for a warm note)
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon (if using).
3. In another bowl, beat the eggs lightly. Stir in oil, vanilla, and the entire can of crushed pineapple with juice.
4. Combine wet and dry ingredients just until moistened. Don’t overmix. Fold in chopped nuts if using.
5. Pour batter into the prepared loaf pan and smooth the top.
6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
7. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Optional: Top with a simple glaze made from powdered sugar and pineapple juice for extra sweetness.
