Preparation of the gorgonzola sauce: In a saucepan, heat the crème fraîche with the crushed garlic. Add the gorgonzola in small pieces and let melt gently. Mix well to obtain a smooth sauce.
Assembly and final cooking: Remove the potatoes from the oven, pour the gorgonzola sauce over them. Return to the oven for an additional 10 minutes, until the gratin is lightly browned on the surface.
Serving: Sprinkle with fresh parsley to decorate and serve hot for a dish full of flavor.
