While the potatoes are cooking, warm a frying pan on medium heat. Put the minced meat in the pan and cook it until it turns golden brown. Take out of the pan and place to the side.
In the same pan, add a bit more oil if needed. Cook the onion, carrot, and pepper until they are soft, for about 5 to 7 minutes. Put the garlic and dried herbs in the pan and cook for one more minute.
Put the meat back in the pan, pour in the broth, and let it cook until most of the liquid is gone.
Prepare stuffed potatoes:
After the potatoes are done, cut them in half lengthwise. Gently remove the potato skins, making sure to leave a little bit of potato on them.
Mix the scooped-out potatoes with butter and milk until they are smooth. Add salt and pepper to your liking.
Combine the mashed potatoes with the meat and vegetable mix, and then put the mixture back into the potato skins.
Put grated cheese on top of each potato half that is stuffed.
Bake Once More:
Put the potatoes back in the oven and bake for 20 to 25 more minutes until the cheese is melted and bubbly.
