Ingredients:
6-8 lemons (organic, unwaxed preferred)
1/4 cup coarse sea salt (more if needed)
1-2 additional lemons for juice
Sterilized glass jar with a tight-fitting lid
Optional spices: bay leaves, peppercorns, cloves (for added flavor)
Instructions:
1. Prepare the Lemons:
Wash the lemons thoroughly to remove any dirt or wax.
Cut off both ends of each lemon.
Slice each lemon lengthwise into quarters or crosswise without cutting all the way through, keeping the lemon intact at the base.
