1 handful of purslane leaves (washed and drained)
2 ripe tomatoes
1 cucumber
1 red onion
2 tablespoons of extra virgin olive oil Juice
of half a lemon
Salt and pepper to taste
A handful of crumbled feta cheese (optional)
Instructions:
Preparing the ingredients: Wash the purslane leaves thoroughly and drain them. Slice the tomatoes and cucumbers into rounds and finely chop the red onion.
To prepare the salad: In a large salad bowl, mix the purslane leaves with the tomato, cucumber, and onion slices.
Dressing: Drizzle the salad with olive oil and lemon juice. Season with salt and pepper to taste.
Add feta cheese: If you like cheese, you can add a handful of crumbled feta cheese for extra flavor and creaminess.
Stir and serve: Gently stir all the ingredients to evenly distribute the dressing. Serve immediately to enjoy the freshness and vibrant flavors of this healthy and delicious salad.
