1. Place the beef cubes in the bottom of your slow cooker.
2. Add the chopped onion and sliced mushrooms on top of the beef.
3. Pour the red wine and beef broth over the ingredients in the slow cooker.
4. Cover and cook on low for 8 hours or until the beef is tender.
5. Before serving, give it a good stir and season with salt and pepper to taste.
Variations & Tips
For a richer flavor, you can add a tablespoon of tomato paste or a few cloves of garlic to the slow cooker. If you have picky eaters, consider using baby carrots instead of mushrooms, as they add a touch of sweetness. You can also substitute the red wine with grape juice or additional beef broth if you prefer a non-alcoholic version. For a thicker sauce, mix a tablespoon of cornstarch with cold water and stir it into the stew about 30 minutes before serving.
