1 small head of cabbage, cut into wedges
1 pound of smoked sausage, sliced
1 can (14.5 oz) of diced tomatoes
4 cups of chicken broth
Directions
Place the cabbage wedges in the bottom of your slow cooker.
Layer the sliced smoked sausage on top of the cabbage.
Pour the can of diced tomatoes over the sausage and cabbage.
Add the chicken broth, ensuring that the ingredients are mostly covered.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the cabbage is tender.
Stir gently before serving to combine the flavors.
Variations & Tips
For a vegetarian version, you can swap the smoked sausage with a plant-based sausage or add a can of drained and rinsed beans for protein. If you like a bit of spice, consider adding a pinch of red pepper flakes or a dash of hot sauce. You can also experiment with different types of sausage, like kielbasa or andouille, to change up the flavor profile. For a thicker stew, add a couple of peeled and diced potatoes to the slow cooker.
