Directions
1. Preheat your oven to 350°F (175°C).
2. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess fat.
3. Stir in the taco seasoning and salsa, and let it simmer for about 5 minutes to let the flavors meld together.
4. Spread the crushed tortilla chips evenly in the bottom of a 9×13 inch baking dish.
5. Pour the beef mixture over the chips, spreading it out evenly.
6. Sprinkle the shredded cheddar cheese over the top.
7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Variations & Tips
For a bit of extra nutrition, you can add a can of drained black beans or corn to the beef mixture. If you like it spicy, consider adding some chopped jalapeños or using a spicier salsa. For a vegetarian version, substitute the ground beef with a plant-based meat alternative or more beans. You can also experiment with different types of cheese, like pepper jack for a kick or Monterey Jack for a milder flavor.
