Heat the olive oil in a large skillet over medium-high heat. Sear the pork roast on all sides until browned, about 3-4 minutes per side.
Place the seared pork roast in the slow cooker.
In a small bowl, mix the onion soup mix with the chicken broth and minced garlic. Pour the mixture over the pork roast.
Cover and cook on low for 8-10 hours or until the pork is tender and easily pulls apart with a fork.
Once cooked, shred the pork with two forks and mix it with the juices in the slow cooker before serving.
Variations & Tips
For a different flavor profile, try using a packet of ranch dressing mix instead of onion soup mix. You can also add sliced onions or carrots to the slow cooker for extra veggies. If you prefer a spicier kick, add a teaspoon of crushed red pepper flakes to the broth mixture. For a touch of sweetness, a tablespoon of honey or brown sugar can be added to the mix.
