Mix all ingredients with a whisk or hand mixer until smooth. If you like, add a pinch of cinnamon.
Heat some oil in a pan (approx. 1 teaspoon per pancake).
Pour the batter into the hot pan in batches and cook over medium heat for about 3 minutes per side until golden brown.
Drain the cooked pancakes on paper towels and serve with powdered sugar, fruit, or yogurt, if desired.
