- 1 cup cooked rice, cooled
- 1 can of tuna, drained
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 red onion, finely chopped
- 1/4 cup olives, sliced (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Prepare the Ingredients: Start by chopping the cucumber, tomato, and red onion. Drain the canned tuna and set it aside.
- Mix the Salad: In a large bowl, combine the cooked rice, tuna, cucumber, tomato, red onion, and olives.
- Dress the Salad: Drizzle olive oil and lemon juice over the salad. Toss everything together until well combined.
- Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve immediately or chill in the refrigerator for a refreshing cold salad.
