Ingredients:
- 3 medium-sized zucchinis (approx. 600g or 1.3 lbs)
- 5 large eggs
- 5 tablespoons Parmesan cheese (approx. 40g or 1.4 oz)
- Salt to taste
- Olive oil for greasing
- 2 tablespoons finely chopped fresh parsley
- 250g (8.8 oz) cream cheese (Philadelphia or similar)
- 200g (7 oz) cooked ham (or substitute with vegetables/thinly sliced tomatoes for a vegetarian option)
Instructions:
- Prepare the Zucchini:
- Preheat your oven to 200Β°C (392Β°F).
- Wash and grate the zucchinis using the large holes of a grater.
- Sprinkle the grated zucchini with salt, mix, and place in a strainer to drain excess water.
