Instructions:
1. Preheat oven to 350 degrees F (175 degrees Celsius). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, stir together the flour, sugar, baking powder, salt and cocoa powder.3. In a large bowl, gently mix together the oil, buttermilk, eggs, food coloring, vinegar and vanilla with a
hand mixer.
4. Add the dry ingredients to the wet ingredients and mix until a smooth, well-blended mixture forms.
5.Divide the batter evenly between the cake pans and bake for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool on rack for 15 minutes, then turn
cakes onto rack to cool completely.
6. To make the cream cheese frosting, stir the cream cheese, butter and vanilla together in a large bowl until smooth. Add the sugar and beat on low speed until incorporated.Increase speed to high
and mix until very light and fluffy.
7. Spread the cooled cake with cream cheese frosting and serve.
Variations and Tips:
– To give the dough a special touch, add a pinch of cinnamon to the dough. It adds warmth to the flavor palette without overpowering the classic taste.- If you don’t have buttermilk, you can make
your own buttermilk by mixing 1 tablespoon of white vinegar or lemon juice with enough milk to make 1 cup, then letting it sit for about 10 minutes.
– Wear an apron or clothing that you don’t mind getting a hint of red! The food coloring can be a little messy, but it’s just fun to make this colorful cake.
– Don’t like too much frosting? For a lighter touch, you can halve the frosting recipe.- Make it like cupcakes! Simply set the baking time to around 20 minutes, ideal for sharing or selling cakes.
