Instructions
1. Mix the Dough
In a large bowl, combine the flour, salt, sugar, and yeast.
Add the warm water and stir until a rough dough forms. If it feels too sticky, add a bit more flour.
Mix in the seeds and olive oil (if using), then knead briefly to distribute them evenly.
2. Knead & Let it Rise
Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic.
No-Knead Option: Mix all ingredients, then cover and let the dough rest at room temperature for 8–12 hours for a slower fermentation.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm spot for 1–2 hours until doubled in size.
3. Shape the Dough
Once risen, gently punch down the dough to release air.
Shape it into a round or oval loaf (or divide it into two smaller loaves).
Place on a parchment-lined baking sheet or in a proofing basket.
4. Second Rise
Cover the shaped dough with a towel or plastic wrap and let it rise again for 30–45 minutes until slightly puffed.
5. Prep the Oven
Preheat the oven to 450°F (230°C).
For a crispy crust, place a Dutch oven or an empty baking pan on the lower rack to create steam.
If desired, brush the dough with water or egg wash and sprinkle extra seeds on top.
6. Bake
Transfer the dough into the hot oven. If using a Dutch oven, bake covered for 20 minutes.
Remove the lid or steam source and bake another 15–20 minutes until golden brown and hollow-sounding when tapped.
7. Cool & Enjoy
Let the bread cool on a wire rack for at least 20–30 minutes before slicing.
Serve fresh with butter, olive oil, or your favorite spreads.
